Fireside Feta with Thyme

1 medium block of feta cheese
8 sprigs fresh thyme
freshly ground black pepper
3 tablespoons olive oil
1 package pita bread

Let the cheese warm to outside temperature as you prepare your campfire. Place a portable grill rack over hot coals and place the block of cheese in the center of a sheet of tinfoil.

Top the cheese with thyme, pepper and olive oil and wrap with the tinfoil, sealing to make a foil packet. Place the packet on the grill and allow it to cook for about 10 minutes. Remove from heat, open the packet, making sure not to spill the oils and liquid in the foil. Remove the cheese from the foil and place the cheese back on the grill, cooking for 2 minutes on both long sides, or until you see grill marks. Remove the cheese from heat, place in a shallow bowl and pour the olive oil and thyme mixture over the top of the feta.

Brush the pita bread with olive oil and grill for 2 minutes on each side, until crisp. Serve the pita bread warm with the cheese and oil.
