4 small apples, cored, leaving 1/2 inch of the bottom intact
1/3 cup apple cider or juice
1 teaspoon brown sugar
1/4 teaspoon ground cinnamon
Maple or sorghum syrup for serving
Place the apples in a baking dish. In a small bowl, stir together the cider or juice, sugar and cinnamon. Evenly spoon into the center of each apple. Cover with plastic wrap and microwave on high power for 4 minutes. Remove from the microwave and let stand 3 minutes before serving with a drizzle of syrup.
