Green Chile Ice Cream

June 30, 2022

“When I was experimenting with different flavors of ice cream, I discovered that if I rinsed canned green chiles and added them to the mixture, they tasted almost like pineapple after they were processed in the ice cream machine. I started with the avocado ice cream my dad had made for an old television show called ‘Frying Pans West,’ so I guess you could say this ice cream is a joint venture between Dad and me.” ~ Holly Arnold Kinney

Peel and slice the avocados. Transfer the avocado flesh to the bowl of an electric mixer bowl with the lime juice and confectioners’ sugar. With the mixer on low speed, beat the mixture until smooth. Add the green chiles and mix until incorporated. Add the whipped cream or ice cream and beat until thoroughly mixed.

Transfer the mixture to an ice cream machine and freeze according to the manufacturer’s instructions. Serve garnished with mint.
