Chunky Cherry Pecan Ice Cream

1/2 cup coarsely chopped pecans
1/4 cup sugar
1 tablespoon Land O Lakes® butter
3 cups Land O Lakes® fat free half & half
1 1/2 cups sour cream
1 cup sugar
1/4 cup cherry preserves
1 tablespoon vanilla
1 cup pitted quartered dark sweet cherries
*Substitute 1 (16.5-ounce) can sour cherries, drained, chopped

Combine pecans, 1/4 cup sugar and butter in heavy saucepan or skillet. Cook, stirring constantly, over medium heat 4 to 5 minutes or until sugar turns golden. Pour onto heavy-duty aluminum foil. Cool completely. Break into pieces. Combine half & half, sour cream, 1 cup sugar, cherry preserves and vanilla in bowl; stir until sugar dissolves. Stir in pecans and cherries. Pour into ice cream freezer. Freeze according to manufacturer’s directions.
