2 potatoes, scrubbed but not peeled
2 tablespoons canola or vegetable oil
1/4 teaspoon black pepper
1/4 teaspoon salt
Preheat the oven to 450 degrees. Lightly grease a baking sheet and set aside. Cut the potatoes into half-inch strips. Place in a large zip-top bag and drizzle with the oil. Close the bag and shake well to coat the potatoes evenly. Arrange the potatoes in a single layer on the prepared baking sheet and sprinkle with the pepper. Bake for 40 minutes, carefully turning every 10 minutes with tongs. Sprinkle evenly with the salt and serve warm.
